Beetroot Hummus

Beetroot hummus

Beetroot hummus

What’s this? Beetroots (ideally oven baked, cooked is ok too), garlic, olive oil, a wee bit of ghee, lime juice, salt, mint and ras el hanout. All mixed in a blender until smooth-ish. You might want to add some tahini as well, if you like it (I don’t).

If you don’t have ras el hanout (“Moroccan garam masala“) at home, make your own! I’m sure you can find some coriander seeds, cinnamon, ginger, nutmeg, cardamom, cloves and black pepper in your kitchen :) Lavendel, rose petals, galangal and pimiento are a bonus.

Serve on homemade, rustic bread and sprinkle plenty of wee feta cheese bits on top. Decorate with a couple of mint leaves and extra lime juice. (I had mine as is today, no bread but some very tasty steamed cauliflower!)

Enstacy?

Enstasy is another word for samadhi; it’s the fourth state that transcends the other three states of waking, dreaming and deep sleep. It’s the joy (emerging from the source) of what we are. To be absorbed in enstasy is to dwell in ones true essence, mind dissolving in consciousness. It’s the most beautiful feelingless feeling, and it’s an expression of love in its purest form… it’s truly and literally beyond words.

(Ecstasy on the other hand is joy triggered from outside, from a source percieved as separate or external.)

I’ve kept the unusual spelling »enstacy« as a gentle reminder, a pointer… I used to be a perfectionist and a workaholic, and I want this to remind me of what really matters… what’s really important in life. And I think it looks prettier too :)
